Pink Velvet Sandwich Cookies – Bake from Scratch





Tender purple velvet cookies encompass a tangy cream cheese filling. A ultimate roll in peppermint candies sends this candy sandwich cookie straight to the completely satisfied vacation zone.

Pink Velvet Sandwich Cookies

Makes about 20 sandwich cookies

  • ½ cup (113 grams) plus 2 tablespoons (28 grams) unsalted butter, softened and divided
  • cups (300 grams) granulated sugar, divided
  • 1 giant egg (50 grams)
  • teaspoons (6 grams) vanilla extract, divided
  • cups (188 grams) all-purpose flour
  • 1 tablespoon (5 grams) unsweetened cocoa powder
  • ½ teaspoon (2.5 grams) baking soda
  • ¼ teaspoon kosher salt
  • Pink gel meals coloring*
  • 4 ounces (113 grams) cream cheese, softened
  • 2 cups (240 grams) confectioners’ sugar
  • Garnish: crushed peppermint candies
  • Within the bowl of a stand mixer fitted with the paddle attachment, beat ½ cup (113 grams) butter and 1 cup (200 grams) granulated sugar at medium velocity till fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add egg and 1 teaspoon (4 grams) vanilla, beating till mixed.

  • In a medium bowl, stir collectively flour, cocoa, baking soda, and salt. With mixer on low velocity, regularly add flour combination to butter combination, beating till mixed. Beat in meals coloring till dough reaches desired colour. Cowl with plastic wrap, and refrigerate for 1 hour.

  • Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.

  • Roll dough into 1½-inch balls. Roll balls in remaining ½ cup (100 grams) granulated sugar. Place 2 inches aside on ready pans; flatten barely with a spatula.

  • Bake till simply set, 7 to 9 minutes. Let cool on pans for five minutes. Take away from pans, and let cool fully on wire racks.

  • In a big bowl, beat cream cheese and remaining 2 tablespoons (28 grams) butter with a mixer at medium velocity till mixed. Steadily add confectioners’ sugar, beating till easy. Add remaining ½ teaspoon (2 grams) vanilla, beating till mixed.

  • Unfold cream cheese combination onto flat aspect of half of cookies. Place remaining cookies, flat aspect down, on high of filling. Roll edges of cookies in candies, if desired. Cowl and refrigerate for as much as 2 days.
